Easy roasted potatoes with garlic and herbs, perfect for any meal.

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the potato cubes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet. Ensure they have space between them for crisping.
  4. Roast for 25-35 minutes, flipping halfway through, until the potatoes are tender on the inside and crispy on the outside.
  5. Serve hot.

Notes

  • For extra crispy potatoes, ensure they are not overcrowded on the baking sheet.
  • You can add the garlic during the last 10-15 minutes of roasting to prevent burning if you prefer a milder garlic flavor.
  • Fresh herbs provide the best flavor, but 1 teaspoon each of dried rosemary and thyme can be substituted.
