- 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the potato cubes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
