1 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 pound dried egg noodles
2 cups cooked, shredded chicken breast
1 (10.5 ounce) can condensed cream of chicken soup
1 cup beef broth (or onion broth for deeper flavor)
1/2 cup sour cream or plain Greek yogurt
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 cup shredded Gruyère cheese, divided
1/2 cup shredded Swiss cheese
1/4 cup panko breadcrumbs (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Caramelize the onions: Heat olive oil in a large skillet over medium heat. Add the sliced onions, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook slowly, stirring occasionally, for 20 to 30 minutes until the onions are deep golden brown and sweet. Set aside.
Cook the egg noodles according to package directions until al dente. Drain well and set aside.
In a large bowl, combine the cream of chicken soup, beef broth, sour cream, Worcestershire sauce, thyme, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Mix until smooth.
Add the cooked chicken, cooked noodles, and caramelized onions to the soup mixture. Stir gently to coat everything evenly.
Fold in 3/4 cup of the Gruyère cheese and all of the Swiss cheese. Pour the mixture into the prepared baking dish.
In a small bowl, mix the remaining 1/4 cup Gruyère cheese with the panko breadcrumbs, if using. Sprinkle this mixture evenly over the top of the casserole.
Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the cheese topping is melted and lightly browned.
Let the casserole rest for 5 minutes before serving.
