2 large eggplants, about 1.5 lbs total
1 teaspoon salt
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup all-purpose flour
2 large eggs, beaten
1 cup Italian-style breadcrumbs
1/4 cup olive oil, plus more for frying
Fresh basil leaves, for garnish (optional)
Instructions
Slice eggplants into 1/4-inch thick rounds. Arrange on a baking sheet and sprinkle with salt. Let sit for 30 minutes to draw out moisture, then pat dry with paper towels.
Set up a breading station: one shallow dish with flour, one with beaten eggs, and one with breadcrumbs.
Dredge each eggplant slice in flour, then dip in egg, and finally coat with breadcrumbs.
Heat about 1/4 inch of olive oil in a large skillet over medium-high heat. Fry eggplant slices in batches until golden brown on both sides, about 2-3 minutes per side. Add more oil as needed. Transfer fried eggplant to a paper towel-lined plate.
Preheat your oven to 375°F (190°C).
Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
Arrange a single layer of fried eggplant slices over the sauce.
Spoon about half of the remaining marinara sauce over the eggplant.
Sprinkle half of the mozzarella and half of the Parmesan cheese over the sauce.
Repeat layers with remaining eggplant, marinara sauce, mozzarella, and Parmesan cheese.
Bake for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is heated through.
Let stand for 5-10 minutes before serving. Garnish with fresh basil if desired.
Notes
For a crispier eggplant, you can bake the breaded slices instead of frying. Place them on a wire rack set over a baking sheet and bake at 400°F (200°C) for 15-20 minutes, flipping halfway through.
Use your favorite store-bought or homemade marinara sauce.
This dish can be assembled ahead of time and baked just before serving.
