Make this hearty, Tex-Mex comfort food casserole for a quick weeknight dinner. This recipe layers seasoned ground beef and corn under a simple, golden cornbread crust.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese, divided
  • 1 box (8.5 ounces) Jiffy Corn Muffin Mix
  • 1 large egg
  • 1 cup milk

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and onion. Cook until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
  3. Stir the taco seasoning mix into the beef mixture. Cook for 1 minute, stirring constantly.
  4. Remove the skillet from the heat. Stir in the drained corn, rinsed black beans, diced tomatoes with green chilies, and half of the shredded cheese (1/2 cup). Spread this meat mixture evenly into the prepared baking dish.
  5. In a medium bowl, whisk together the Jiffy Corn Muffin Mix, egg, and milk until just combined. Do not overmix the batter.
  6. Pour the cornbread batter evenly over the meat mixture in the baking dish.
  7. Bake for 20 to 25 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. Sprinkle the remaining 1/2 cup of cheese over the top during the last 5 minutes of baking.
  9. Let the tamale pie cool for 5 minutes before slicing and serving.

Notes

  • For a spicier filling, add 1/4 teaspoon of cayenne pepper with the taco seasoning.
  • You can substitute ground turkey or shredded cooked chicken for the ground beef.
  • This casserole freezes well; assemble completely, cover tightly, and freeze before baking. Thaw overnight in the refrigerator before baking as directed, adding about 10 minutes to the bake time.
