Ingredients

Scale
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1 head iceberg or romaine lettuce, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped red onion
  • 1 cup crushed or whole Nacho Cheese Doritos
  • 1 cup Catalina dressing (or your favorite creamy taco dressing)
  • Optional: 1/2 cup sour cream or plain Greek yogurt
  • Optional for Low Carb Swap: Substitute Doritos with 1 cup crushed baked tortilla chips or extra chopped lettuce/peppers

Instructions

  1. Cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
  2. Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 to 7 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat.
  3. In a very large bowl, layer the ingredients. Start with the chopped lettuce as the base.
  4. Top the lettuce with the seasoned ground beef mixture.
  5. Distribute the shredded cheese, diced tomatoes, black olives, and red onion evenly over the beef.
  6. Drizzle the Catalina dressing over the salad layers.
  7. Just before serving, sprinkle the crushed Doritos over the top layer.
  8. If using, dollop with sour cream or Greek yogurt. Serve immediately while the chips are still crunchy.

Notes

  • For a make-ahead option, prepare the meat and chop all vegetables, storing them separately in the refrigerator. Assemble and add chips just before serving to maintain crunch.
  • To make a Low Carb Taco Salad, skip the Doritos entirely. Add extra crisp vegetables like bell peppers or jicama for texture, or use low-carb baked chips if desired.
  • This recipe scales well for a crowd; simply double the meat and vegetable quantities.
