Make these sweet and savory McGriddle Bites at home. This recipe uses simple ingredients to create mini pancake bites filled with sausage and cheese, perfect for quick breakfasts or meal prep.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon maple sugar or finely ground maple candy (for maple flavor in batter)
  • 1 large egg
  • 3/4 cup milk
  • 1 tablespoon melted butter
  • 12 pre-cooked breakfast sausage patties, cut in half (or use mini sausages)
  • 6 slices American cheese, cut into quarters
  • Vegetable oil or cooking spray for the griddle
  • Maple syrup for serving (optional glaze)

Instructions

  1. In a medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and maple sugar.
  2. In a separate small bowl, whisk the egg, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  4. Lightly grease a non-stick griddle or large skillet and heat over medium heat.
  5. Pour small circles of batter onto the hot griddle, about 2 inches wide.
  6. Immediately place one half of a sausage patty onto the center of each batter circle.
  7. Cook for 1 to 2 minutes, until bubbles form on the surface and the edges look set.
  8. Flip the bites carefully. Cook for another minute.
  9. Place a small piece of cheese on top of each sausage patty while the second side cooks. Cook until the cheese melts slightly and the pancake is golden brown.
  10. Remove from the griddle. Repeat with the remaining batter and fillings.
  11. For a sweeter finish, you can brush the tops lightly with maple syrup while warm.
  12. Serve immediately or cool completely for make-ahead storage.

Notes

  • For a make-ahead option, cool the cooked bites completely. Store them in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
  • Reheat frozen bites in the microwave for 30 to 60 seconds, or toast them in a toaster oven until warmed through.
  • To make these high protein McGriddle bites, substitute half the all-purpose flour with protein powder or use a high-protein pancake mix.
