You can make this easy Jello Poke Cake for your next gathering. It is a moist, colorful dessert that uses simple ingredients and always pleases a crowd.

  • 1 box white cake mix
  • Ingredients required by cake mix box (usually eggs, oil, water)
  • 1 package (3 oz) Jello (your choice of flavor)
  • 1 cup boiling water
  • 1 cup cold water
  • 8 ounces Cool Whip, thawed

Instructions

  1. Prepare the cake according to the package directions, using a 9×13 inch baking pan. Bake until a toothpick inserted in the center comes out clean. Let the cake cool completely on a wire rack.
  2. While the cake cools, prepare the Jello. In a bowl, dissolve the Jello powder in 1 cup of boiling water. Stir for two minutes until completely dissolved. Add 1 cup of cold water and stir well.
  3. Once the cake is cool, use the handle of a wooden spoon or a large fork to poke holes all over the top of the cake. Space the holes about one inch apart. Poke all the way down to the bottom of the cake.
  4. Carefully pour the liquid Jello mixture evenly over the entire surface of the cake, allowing the Jello to seep into the holes.
  5. Refrigerate the cake for at least 3 to 4 hours, or until the Jello is completely set.
  6. Once the Jello is firm, spread the thawed Cool Whip evenly over the top of the set Jello layer.
  7. Slice and serve this moist cake idea immediately, or keep it covered in the refrigerator until serving time.

Notes

  • For a festive Christmas Jello Poke Cake, use red and green Jello flavors like Strawberry and Lime.
  • If you want a richer topping than Cool Whip, you can use a cream cheese frosting instead.
  • For a summer gelatin dessert, use bright fruit flavors like lemon or orange.
