Make this easy, crispy Mexican Pizza at home. This recipe replicates the Taco Bell favorite using seasoned beef, refried beans, and melted cheese between two crisp tortillas. It is a quick, family-friendly dinner ready in under 30 minutes.

  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 1 (15 ounce) can refried beans, warmed
  • 4 large flour tortillas (about 8-inch size)
  • 1 tablespoon vegetable oil (for crisping)
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes (for topping)
  • 1/4 cup sliced black olives (for topping)
  • 2 tablespoons sliced green onions (for topping)

Instructions

  1. Prepare the meat: Brown the ground beef in a skillet over medium heat. Drain off any excess fat. Add the taco seasoning and water to the beef. Simmer for 5 to 7 minutes, stirring occasionally, until the liquid reduces. Set aside.
  2. Crisp the tortillas: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly brush both sides of the four flour tortillas with vegetable oil. Place them directly on the oven racks or on a baking sheet. Bake for 5 to 8 minutes, flipping halfway through, until they are crisp. Alternatively, use an air fryer at 375 degrees F for 4-5 minutes per tortilla.
  3. Assemble the first layer: Place one crispy tortilla on a baking sheet lined with parchment paper. Spread half of the warmed refried beans evenly over the tortilla. Top the beans with half of the seasoned ground beef.
  4. Add sauce and cheese: Pour half of the enchilada sauce over the beef layer. Sprinkle with half of the shredded cheese blend.
  5. Add the second layer: Carefully place a second crispy tortilla on top of the cheese layer. Repeat the layering process: spread the remaining beans, then the remaining beef, followed by the remaining enchilada sauce, and the rest of the cheese.
  6. Bake: Bake the assembled pizza for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  7. Top and serve: Remove the Mexican Pizza from the oven. Top immediately with diced tomatoes, sliced black olives, and green onions. Slice into wedges and serve this fast food favorite homemade while hot.
