Ingredients
Scale
2 cups ripe peaches, diced
1/2 cup red onion, finely diced
1 jalapeño pepper, seeded and minced (use more for extra heat)
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
1/2 teaspoon salt
Instructions
Prepare all your produce: dice the peaches, finely dice the red onion, mince the jalapeño, and chop the cilantro.
In a medium bowl, combine the diced peaches, red onion, minced jalapeño, and chopped cilantro.
Pour the fresh lime juice over the mixture.
Add the salt.
Gently stir all ingredients together until they are evenly mixed.
Taste the salsa and adjust lime juice or salt as needed.
Serve immediately with tortilla chips, or use as a topping for grilled meats or tacos.
Notes
For a smoky flavor, try grilling the peaches lightly before dicing them.
If you want a Peach Mango Salsa variation, substitute half the peaches with diced ripe mango.
This fresh salsa is best eaten the day it is made, but you can store leftovers in an airtight container in the refrigerator for up to two days.
