  • 1/2 cup red onion, finely diced
  • 1 jalapeño pepper, seeded and minced (use more for extra heat)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt

Instructions

  1. Prepare all your produce: dice the peaches, finely dice the red onion, mince the jalapeño, and chop the cilantro.
  2. In a medium bowl, combine the diced peaches, red onion, minced jalapeño, and chopped cilantro.
  3. Pour the fresh lime juice over the mixture.
