1/2 cup creamy peanut butter
1/4 cup low sodium soy sauce (or tamari for gluten-free)
2 tablespoons rice vinegar
1 tablespoon maple syrup or honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 teaspoon sesame oil
1/2 teaspoon sriracha or hot sauce (adjust to taste)
2–4 tablespoons hot water (to thin)
Instructions
Combine the peanut butter, soy sauce, rice vinegar, maple syrup, ginger, garlic, sesame oil, and sriracha in a medium bowl.
Whisk the ingredients together until mostly combined.
Add the hot water one tablespoon at a time, whisking continuously until the sauce reaches your desired consistency. Start with 2 tablespoons and add more if you want a thinner dressing.
Taste the sauce and adjust seasonings, adding more heat or sweetness if needed.
Use immediately as a dip, dressing, or marinade. Store leftovers in an airtight container in the refrigerator for up to one week.
Notes
For a Vegan Peanut Sauce, use maple syrup instead of honey.
To make this Gluten Free Peanut Dressing, use tamari instead of standard soy sauce.
This sauce works well as a marinade for chicken or tofu; let it sit for at least 30 minutes before cooking.
If the sauce thickens too much upon refrigeration, whisk in a small amount of warm water before serving.
