You can make this light, airy, and rich chocolate mousse with just three simple ingredients. It is a quick dessert that tastes elegant and requires no baking.

  • 200g dark chocolate (70% cocoa minimum)
  • 1 cup heavy cream, cold
  • 2 tablespoons granulated sugar

Instructions

  1. Chop the dark chocolate into small, uniform pieces. Place the chopped chocolate in a medium, heatproof bowl.
  2. In a small saucepan, heat half of the heavy cream (1/2 cup) over medium heat until it just begins to simmer around the edges. Do not let it boil.
  3. Pour the hot cream over the chopped chocolate. Let it sit undisturbed for two minutes to melt the chocolate.
  4. Whisk the chocolate and cream mixture gently until it is completely smooth and glossy. Set this mixture aside to cool to room temperature.
  5. In a separate, chilled bowl, combine the remaining 1/2 cup of cold heavy cream and the 2 tablespoons of sugar.
  6. Using an electric mixer or a whisk, beat the cream and sugar until stiff peaks form. You want the cream to hold its shape firmly.
  7. Gently fold about one-third of the whipped cream into the cooled chocolate mixture using a rubber spatula. This lightens the chocolate base.
  8. Carefully fold in the remaining whipped cream until no white streaks remain. Work slowly to keep the mixture airy.
  9. Spoon or pipe the mousse into individual serving cups or ramekins.
  10. Chill the chocolate mousse for at least four hours, or until firm, before serving.

Notes

  • For a richer flavor, use chocolate with 75% cocoa or higher.
  • If you do not have a mixer, you can use a balloon whisk, but this will increase your prep time significantly.
  • Serve this mousse in individual cups for an elegant presentation at your next dinner party.
