Make this easy, creamy beer cheese dip on the stovetop in under 15 minutes. It uses sharp cheddar and your favorite lager for a perfect pub-style appetizer for game day or parties.

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup light beer (lager recommended)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, cubed and softened
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Pinch of salt and black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly pour in the beer while whisking continuously until the mixture is smooth. Bring the mixture to a gentle simmer, stirring until it thickens slightly, about 3 minutes.
  4. Reduce the heat to low. Add the cubed cream cheese and stir until it melts completely into the sauce.
  5. Gradually add the shredded sharp cheddar cheese, a handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not let the mixture boil.
  6. Stir in the Worcestershire sauce, garlic powder, and smoked paprika. Season with salt and pepper to taste.
  7. Serve the beer cheese dip immediately while warm with soft pretzels or chips.

Notes

  • For the smoothest dip, use pre-shredded cheese or shred the cheese yourself from a block. Avoid using pre-shredded cheese that contains anti-caking agents if possible.
  • If the dip becomes too thick while serving, whisk in a tablespoon of extra beer or milk to reach your desired consistency.
  • This dip pairs well with soft pretzel bites, tortilla chips, or vegetable sticks for dipping.
