Make these easy baked apple fritter bites for a simple, cozy fall treat. They feature fresh apples and cinnamon, topped with a sweet apple cider glaze, offering a healthier alternative to fried fritters.

  • 2 large Granny Smith apples, peeled, cored, and finely diced
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons apple cider
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 24-cup mini muffin pan or line it with paper liners.
  2. In a medium bowl, combine the diced apples, granulated sugar, and brown sugar. Set this aside.
  3. In a separate large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a small bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
  6. Gently fold the apple-sugar mixture into the batter until the apples are evenly distributed.
  7. Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean. Let the fritter bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Prepare the glaze: In a small bowl, whisk together the powdered sugar, apple cider, and vanilla extract until smooth. Add more cider, one teaspoon at a time, if the glaze is too thick.
  10. Once the fritter bites are cool, drizzle the cinnamon glaze over the tops. Allow the glaze to set before serving.

Notes

  • For a crispier exterior, you can lightly brush the tops of the fritter bites with melted butter before baking.
  • If you prefer a stronger apple flavor in the glaze, substitute 1 tablespoon of the apple cider with 1 teaspoon of apple butter.
  • These apple fritter bites are best eaten the day they are made, but you can store leftovers in an airtight container at room temperature for up to two days.
