1 tablespoon lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon

1 cup rolled oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375°F (190°C). Grease a 9-inch pie plate or an 8×8 inch baking dish.
In a large bowl, toss the sliced apples with lemon juice, granulated sugar, 1 teaspoon cinnamon, and nutmeg. Pour the apple mixture into the prepared baking dish.
In a separate medium bowl, combine the flour, rolled oats, brown sugar, 1/2 teaspoon cinnamon, and salt.
Add the cold butter pieces to the dry ingredients. Use a pastry blender, your fingers, or a fork to cut the butter into the mixture until it resembles coarse crumbs.
Sprinkle the oat topping evenly over the apples.
Bake for 35-45 minutes, or until the topping is golden brown and the apples are tender and bubbly.
Let the crisp cool for at least 10 minutes before serving.

For a crispier topping, ensure your butter is very cold when you cut it into the dry ingredients.
