You can make light, airy, and high-protein cloud bread using just three simple ingredients. This low-carb, gluten-free alternative is perfect for sandwiches or snacks.

  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar (optional, for stability)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Place the cottage cheese and egg yolks into a food processor or blender. Blend until the mixture is completely smooth, with no visible curds remaining. This step is key for a smooth texture.
  3. In a separate, clean, dry bowl, beat the egg whites until soft peaks form. If using, add the cream of tartar during the last minute of beating and continue until stiff peaks form.
  4. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites until just combined. Do not overmix; you want to keep the air in the mixture.
  6. Spoon or scoop the batter onto the prepared baking sheet, forming 6 to 8 round portions, similar to hamburger buns.
  7. Bake for 25 to 30 minutes, or until the cloud bread is golden brown on top and firm to the touch.
  8. Remove from the oven and let the cloud bread cool completely on the baking sheet before handling.
