1 cup soft Medjool dates, pitted
1/2 cup walnuts or pecans
1/4 cup unsweetened cocoa powder
1 tablespoon chia seeds
1 teaspoon vanilla extract
1 pinch sea salt
2 tablespoons water (if needed)
Instructions
Place the pitted dates, nuts, cocoa powder, chia seeds, vanilla extract, and salt into a food processor.
Process the mixture until it forms a thick, sticky dough. You may need to stop and scrape down the sides a few times.
If the mixture seems too dry to hold together, add water one teaspoon at a time while processing until the dough clumps when pressed between your fingers.
Roll the dough into small, uniform balls, about 1 inch in diameter.
Place the finished date brownie balls on a parchment-lined plate or tray.
Chill the balls in the refrigerator for at least 30 minutes to firm up before serving.
Notes
For an extra rich flavor, use dark cocoa powder.
You can roll the finished balls in shredded coconut or extra cocoa powder for coating.
Store leftover brownie bites in an airtight container in the refrigerator for up to two weeks.
If you do not have walnuts, almonds work well in this recipe.
