  • 2 lbs boneless, skinless chicken thighs
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (6 ounce) jar sun-dried tomatoes in oil, drained and roughly chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for slurry)

Instructions

  1. Place the chicken thighs in the bottom of your slow cooker.
  2. In a medium bowl, mix together the drained diced tomatoes, chopped sun-dried tomatoes, chicken broth, heavy cream, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
  6. In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir this slurry into the sauce in the slow cooker.
  7. Cover and cook on HIGH for 10 to 15 minutes, or until the sauce has thickened to your liking. Stir in the grated Parmesan cheese until smooth.
  8. Serve the creamy crockpot marry me chicken immediately over pasta, rice, or mashed potatoes.

Notes

  • To prevent the sauce from becoming grainy, stir the Parmesan cheese in only after the sauce has thickened with the cornstarch slurry and the heat is low.
