  • 1.5 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro-Tel (diced tomatoes and green chilies), undrained
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium potatoes, peeled and diced (optional for creamier texture, use 1 cup shredded cheddar cheese or 4 oz cream cheese in the last 30 minutes)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Transfer the browned ground beef to the basin of your slow cooker.
  3. Add the chopped onion and minced garlic to the slow cooker.
  4. Add the black beans, kidney beans, corn, diced tomatoes, and Ro-Tel to the slow cooker.
  5. Pour in the beef broth.
  6. Stir in the chili powder, cumin, oregano, salt, and pepper. Mix all ingredients well.
  7. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  8. If you want a creamy cowboy soup, stir in shredded cheddar cheese or cream cheese during the last 30 minutes of cooking until melted and smooth.
  9. Taste and adjust seasonings before serving. Serve hot with your favorite toppings.

Notes

  • For a thicker soup, mash about one cup of the soup against the side of the slow cooker before serving.
  • Serve this comfort food soup with toppings like shredded cheddar cheese, sour cream, or chopped green onions.
  • If you skip the potatoes, this recipe becomes a great dump and go crockpot meal.
