1 tablespoon olive oil
1 tablespoon butter
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 cup dry white wine or chicken broth
1 cup heavy cream or half-and-half
1/2 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
Instructions
Heat olive oil and butter in a large skillet over medium-high heat.
Add shrimp in a single layer and cook for 1-2 minutes per side, until pink and opaque. Do not overcook. Remove shrimp from skillet and set aside.
Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
Pour in white wine or chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 1 minute.
Reduce heat to medium-low. Stir in heavy cream or half-and-half and grated Parmesan cheese. Cook, stirring, until the sauce thickens slightly, about 3-5 minutes.
Stir in red pepper flakes (if using), salt, and pepper.
Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for 1 minute more, until shrimp are heated through.
Remove from heat. Stir in fresh parsley and lemon juice.
Serve immediately over pasta, rice, or with crusty bread.
Notes
For a lighter version, use half-and-half instead of heavy cream.
Adjust the amount of garlic to your preference.
Ensure your shrimp are not overcrowded in the pan when searing to achieve a good sear.
