Make rich, flavorful, and creamy garlic chicken with minimal effort using your slow cooker. This easy recipe is perfect for busy weeknights.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening, optional)

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, minced garlic, Italian seasoning, salt, and pepper until smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shreds.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
  6. Stir in the Parmesan cheese, if using.
  7. If you prefer a thicker sauce, stir the cornstarch slurry into the sauce. Cover and cook on HIGH for an additional 15 minutes, or until the sauce thickens.
  8. Serve hot over pasta, rice, or alongside steamed vegetables.

Notes

  • For an even richer flavor, substitute half of the heavy cream with sour cream during the last 30 minutes of cooking.
  • If you do not have cream of chicken soup, you can substitute it with 1/2 cup of cream cheese and 1/2 cup of milk, whisked well before adding.
  • This recipe freezes well. Cool completely before storing in an airtight container for up to three months.
