  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi (shelf-stable or refrigerated)
  • 1 cup low-sodium chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream or half-and-half
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  2. Add the crumbled bacon to the skillet and cook for 1 minute to crisp it slightly, if needed.
  3. Add the gnocchi and chicken broth to the skillet. Bring the mixture to a simmer, stirring occasionally. Cook according to the gnocchi package directions, usually about 3 to 5 minutes, until the gnocchi is tender.

  6. Stir in the fresh spinach until it wilts, which takes about 1 minute.
