Make this flavorful, bold Cajun chicken in a creamy sauce using just one skillet. This recipe is quick, perfect for a weeknight dinner, and delivers rich Louisiana-style flavor.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Optional: Fresh parsley for garnish

Instructions

  1. Toss the cut chicken pieces with 1 tablespoon of the Cajun seasoning until fully coated.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the chopped onion and cook until softened, about 3 minutes.
  4. Add the minced garlic and the remaining 1 tablespoon of Cajun seasoning to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer and reduce slightly for 2 minutes.
  6. Stir in the heavy cream and bring the mixture to a gentle simmer. Cook for 3-4 minutes until the sauce begins to thicken slightly.
  7. Stir in the grated Parmesan cheese, salt, and pepper. Continue stirring until the cheese is melted and the sauce is smooth.
  8. Return the cooked chicken to the skillet. Stir to coat the chicken completely in the creamy sauce. Heat through for 1-2 minutes.
  9. Remove from heat. Garnish with fresh parsley if desired, and serve immediately over rice or pasta.

Notes

  • For a spicier dish, increase the amount of Cajun seasoning or add a pinch of cayenne pepper to the sauce.
  • If you prefer a thicker sauce, let the cream simmer for a few extra minutes before adding the cheese.
  • This dish pairs well with steamed broccoli or green beans for a complete meal.
