Bake a moist, flavorful quick bread packed with tart cranberries, crunchy walnuts, and bright orange zest. This recipe is easy to follow and perfect for breakfast or a festive snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • Zest of 1 large orange
  • 1/4 cup fresh orange juice
  • 1 cup dried cranberries
  • 1 cup chopped walnuts, lightly toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a separate medium bowl, mix the sugar, egg, vegetable oil, milk, orange zest, and orange juice until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined. Do not overmix.
  5. Gently fold in the dried cranberries and toasted walnuts.
  6. Pour the batter into the prepared loaf pan. Spread the top evenly.
  7. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely before slicing.

Notes

  • To toast walnuts, spread them on a baking sheet and bake at 350°F (175°C) for 5-8 minutes, watching closely to prevent burning.
  • For a Costco cranberry walnut bread copycat flavor, you can add a simple glaze made from 1/2 cup powdered sugar mixed with 1 tablespoon of orange juice, drizzled over the cooled loaf.
  • This quick bread freezes well. Wrap the cooled loaf tightly in plastic wrap and then foil.
