1 sheet frozen puff pastry, thawed
8 ounces brie cheese, rind removed and cut into small cubes
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
Lightly flour your work surface. Unfold the thawed puff pastry sheet.
Use a 2-inch round cookie cutter to cut circles from the pastry. You should get about 12 to 16 circles.
Place the pastry circles on the prepared baking sheet.
Place a small cube of brie cheese in the center of each pastry circle.
Top the brie with about 1/2 teaspoon of cranberry sauce. If using, sprinkle a tiny amount of chopped rosemary over the cranberry sauce.
In a small bowl, whisk together the beaten egg and 1 tablespoon of water to create an egg wash. Brush the edges of the pastry circles lightly with the egg wash.
Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and let the bites cool slightly on the baking sheet before serving. Serve warm.
Notes
For make-ahead preparation, assemble the bites completely, but do not brush with egg wash. Store them covered in the refrigerator for up to 4 hours. Brush with egg wash just before baking.
If you prefer a different base, you can substitute crescent roll dough for puff pastry, though the texture will be less flaky.
For an extra savory note, press a small pecan half onto the top of the cranberry sauce before baking.
