- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can whole kernel corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced (optional)
- 1 cup cherry or grape tomatoes, halved
- 1 1/4 cups quality Italian dressing (store-bought is fine)
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Prepare all vegetables: Dice the bell peppers, finely chop the red onion, mince the jalapeño if using, and halve the tomatoes.
- In a large bowl, combine the rinsed and drained black beans, kidney beans, and drained corn.
- Add the prepared red bell pepper, green bell pepper, red onion, jalapeño, and tomatoes to the bowl with the beans and corn.
- In a separate small bowl, whisk together the Italian dressing, ground cumin, and chili powder. This adds extra depth to the store-bought dressing.
- Pour the dressing mixture over the bean and vegetable mixture.
- Gently fold all ingredients together until everything is evenly coated.
- Cover the bowl and refrigerate for at least 2 hours before serving. This allows the flavors to blend. Marinate overnight for the best taste.
