  • 1 teaspoon chili powder

Instructions

  1. Prepare the vegetables: Dice the red bell pepper, green bell pepper, and red onion. Seed and mince the jalapeño if you are using it. Chop the cilantro.
  2. Combine the beans and corn: In a large bowl, combine the rinsed and drained black beans, black-eyed peas, and drained corn.
  3. Add the fresh vegetables: Add the diced bell peppers, red onion, minced jalapeño, and chopped cilantro to the bowl.
