A hearty and satisfying main dish salad loaded with chicken, bacon, eggs, avocado, blue cheese, and fresh vegetables, all drizzled with a classic red wine vinaigrette. This chopped salad is perfect for a fulfilling lunch or dinner.

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 slices bacon
  • 3 large eggs
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • For the Vinaigrette:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt and pepper. Place on a baking sheet and bake for 20-25 minutes, or until cooked through. Let cool, then dice.
  2. While chicken bakes, cook bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate to drain. Crumble or chop once cooled.
  3. Place eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 9-10 minutes. Drain, cool in ice water, peel, and chop.
  4. Prepare the vinaigrette: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
  5. Assemble the salad: Arrange the chopped romaine lettuce on a large platter or in individual bowls.
  6. Artfully arrange the diced chicken, crumbled bacon, chopped eggs, halved cherry tomatoes, crumbled blue cheese, diced avocado, and sliced red onion in rows over the lettuce.
  7. Drizzle generously with the red wine vinaigrette just before serving.

Notes

  • For a steakhouse-salad level of fulfillment, ensure all toppings are fresh and of good quality.
  • You can grill or pan-sear the chicken instead of baking if preferred.
  • If you don’t have blue cheese, feta or goat cheese can be substituted.
  • For a chopped salad, finely chop all ingredients before arranging them on the bed of lettuce.
