Make the classic Peach Bellini, an elegant and refreshing Italian cocktail perfect for brunch or any celebration. This simple recipe uses only two main ingredients and comes together in minutes.

  • 1/2 cup ripe peach puree (homemade or high-quality store-bought)
  • 3 cups chilled Prosecco or dry sparkling wine
  • Optional: 1 teaspoon simple syrup or sugar, to taste

Instructions

  1. Prepare the peach puree if making it fresh. Peel and pit ripe peaches, then blend them until completely smooth. Strain the puree through a fine-mesh sieve to remove any solids for a silky texture.
  2. Chill all ingredients thoroughly before mixing.
  3. To assemble, pour about 2 tablespoons of peach puree into the bottom of a chilled champagne flute for each serving.
  4. Slowly top the puree with chilled Prosecco, pouring down the side of the glass to maintain carbonation.
  5. Stir gently once to combine the layers. Taste and add a small amount of simple syrup if your peaches are tart.
  6. Serve this easy brunch drink immediately.

Notes

  • For an authentic Italian flavor, use Prosecco. If you prefer a drier cocktail, use Brut Champagne instead.
  • To make a quick Strawberry Bellini, substitute the peach puree with fresh strawberry puree.
  • If you are making a large batch, chill a pitcher, add the peach puree, and add the Prosecco just before serving to keep it fizzy.
