Make soft, buttery cinnamon roll bites fast using refrigerated biscuit dough. These poppable treats bake in a cinnamon syrup bath for an extra gooey center, perfect for breakfast or dessert.

  • 1 (16.3 ounce) can refrigerated biscuit dough (10 biscuits)
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
  2. In a small bowl, mix together the 1/2 cup granulated sugar and 1 tablespoon ground cinnamon. Set aside.
  3. Unroll the biscuit dough. Cut each biscuit into four equal pieces. You should have 40 small pieces.
  4. In a separate medium bowl, whisk together the melted butter, brown sugar, heavy cream, and 1 teaspoon vanilla extract until combined. This is your baking liquid.
  5. Dip each biscuit piece first into the cinnamon-sugar mixture, coating all sides.
  6. Arrange the coated biscuit pieces snugly in the prepared baking pan.
  7. Pour the reserved butter and cream mixture evenly over the biscuit pieces in the pan.
  8. Bake for 20 to 25 minutes, or until the tops are golden brown and the center is set.
  9. While the bites bake, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons milk, and 1/4 teaspoon vanilla extract until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
  10. Remove the pan from the oven. Let the bites cool in the pan for 5 minutes. Drizzle the sweet glaze over the warm bites.
  11. Serve warm for the best gooey texture.

  • For an extra sweet and gooey result, ensure you use the full amount of the butter and cream mixture; this liquid creates the syrup base.
  • If you prefer a thicker glaze, reduce the amount of milk used in the final step.
