Make these soft, chewy Christmas M&M cookie bars for a festive, easy holiday treat perfect for cookie exchanges or parties.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups M&M’s Holiday Baking Candies
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. You can use an electric mixer for this step.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. Gently fold in the M&M’s, semi-sweet chocolate chips, and white chocolate chips using a spatula.
  7. Press the cookie bar dough evenly into the prepared 9×13 inch pan.
  8. Bake for 20 to 25 minutes, or until the edges are lightly golden brown and the center is set. For extra gooey results, slightly underbake.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Once cool, cut the bars into squares. You can frost them if desired, but they are great plain.

Notes

  • For the chewiest bars, use slightly less baking time. The center should look mostly set but still soft.
  • If you want a frosted look, use a simple vanilla glaze or cream cheese frosting after the bars have cooled completely.
  • These bars are excellent for Christmas cookie exchanges because they hold their shape well when cut.
