1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1 cup water
4 ounces dried chipped beef, shredded or chopped
1/4 teaspoon black pepper
Pinch of salt, if needed
8 slices white bread, toasted
Instructions
Toast the bread slices until golden brown and set them aside.
In a medium saucepan, melt the butter over medium heat.
Whisk in the flour and cook for one minute, stirring constantly to create a roux.
Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes.
Stir in the water, pepper, and the chopped chipped beef. Heat through for about 2 minutes. Do not boil after adding the beef.
Taste the sauce and add a pinch of salt only if necessary, as the dried beef is usually salty.
Spoon the creamed chipped beef mixture generously over the prepared toast slices. Serve immediately.
Notes
For a richer flavor, use half-and-half instead of milk.
