  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchinis, halved lengthwise and sliced into 1/4-inch thick pieces
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • 1/4 teaspoon black pepper
  • Optional: Sesame seeds for garnish

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, and black pepper. Set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the minced garlic and ground ginger to the same skillet. Cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Add the sliced zucchini to the skillet. Stir fry for 3 to 4 minutes until the zucchini is tender-crisp. You want it cooked but still holding its shape.
  5. Return the cooked chicken to the skillet with the zucchini.
  6. Pour the prepared sauce mixture over the chicken and zucchini. Bring the sauce to a simmer.
  7. Stir the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
  8. Remove the skillet from the heat. Serve immediately, garnished with sesame seeds if you wish.

Notes

  • For a low carb chicken zucchini meal, serve this stir fry on its own or over cauliflower rice instead of traditional rice or noodles.
  • You can easily prep the chicken and vegetables ahead of time to make this a true 20 minute meal on a busy night.
  • If you prefer a less sweet flavor, reduce the honey by one tablespoon and add one teaspoon of brown sugar to the sauce mixture.
