Make this cozy, cheesy chicken bubble biscuit bake casserole for a simple, comforting weeknight dinner. It uses canned biscuits for a quick, fluffy topping.

  • 3 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 can (16.3 oz) refrigerated biscuit dough (8 biscuits)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, 1.5 cups of the cheddar cheese, garlic powder, onion powder, and pepper. Mix until everything is well combined.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. Open the can of biscuit dough. Cut each biscuit into quarters.
  5. Arrange the biscuit pieces randomly over the top of the chicken mixture, leaving small gaps between them so they can expand and ‘bubble’ during baking.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the biscuits.
  7. Bake for 20 to 25 minutes, or until the biscuits are golden brown and cooked through and the filling is bubbly.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For a richer flavor, substitute cream of chicken soup with cream of mushroom soup or add 1/2 cup of cooked, crumbled bacon to the chicken mixture.
  • You can prepare the base mixture and assemble the casserole up to 24 hours ahead. Cover and refrigerate. Add 5-10 minutes to the covered baking time if baking directly from the refrigerator.
  • Use rotisserie chicken for the quickest preparation time.
