Make pizza parlor-style cheesy garlic breadsticks with a soft interior and stretchy mozzarella. These are perfect as a side for pizza or as a game day appetizer.

  • 1 cup warm water (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons olive oil, plus more for greasing
  • 1 stick (½ cup) unsalted butter, melted
  • 4 cloves garlic, minced
  • ½ teaspoon dried Italian seasoning
  • ¼ teaspoon black pepper
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Marinara sauce or ranch dressing, for serving

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Add flour, salt, and 2 tablespoons olive oil to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Lightly grease a clean bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat your oven to 475°F (245°C). Grease a baking sheet or line it with parchment paper.
  6. Punch down the risen dough. Turn it out onto a lightly floured surface and roll or pat it into a rectangle about 12×18 inches.
  7. Cut the dough into 1-inch wide strips.
  8. In a small bowl, whisk together the melted butter, minced garlic, Italian seasoning, and black pepper.
  9. Brush the garlic butter mixture generously over the dough strips.
  10. Sprinkle the mozzarella and Parmesan cheeses evenly over the buttered strips.
  11. Arrange the breadsticks on the prepared baking sheet, leaving a little space between them.
  12. Bake for 8-12 minutes, or until golden brown and the cheese is melted and bubbly.
  13. Sprinkle with fresh parsley, if desired. Serve immediately with marinara sauce or ranch dressing.

Notes

  • For make-ahead, you can prepare the dough up to the first rise, cover, and refrigerate for up to 24 hours. Let it sit at room temperature for 30 minutes before proceeding with shaping and baking.
  • To freeze, bake the breadsticks completely, let them cool, then freeze in an airtight container or freezer bag. Reheat in the oven until warm.
  • Adjust the amount of garlic and butter to your preference.
