1 (8 ounce) package frozen blintzes
1 (8 ounce) package cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1/4 teaspoon salt

Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
Arrange the frozen blintzes in a single layer in the prepared baking dish.
In a medium bowl, beat the softened cream cheese and sugar until smooth.
Beat in the eggs one at a time, then stir in the sour cream, vanilla extract, and salt until well combined.
Pour the cream cheese mixture evenly over the blintzes.
Bake for 30-40 minutes, or until the casserole is set and lightly golden brown.
Let cool slightly before serving. Serve warm with your favorite jam or fresh fruit.
Notes
For a make-ahead option, prepare the casserole up to the point of baking, cover, and refrigerate overnight. Add a few extra minutes to the baking time if baking from cold.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
You can substitute store-bought crepes for the blintzes if desired.
