A simple, make-ahead cheese blintz casserole perfect for brunch or holidays, using store-bought blintzes and a creamy custard.

  • 1 (8 ounce) package frozen blintzes
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: Jam or fruit for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Arrange the frozen blintzes in a single layer in the prepared baking dish.
  3. In a medium bowl, beat the softened cream cheese and sugar until smooth.
  4. Beat in the eggs one at a time, then stir in the sour cream, vanilla extract, and salt until well combined.
  5. Pour the cream cheese mixture evenly over the blintzes.
  6. Bake for 30-40 minutes, or until the casserole is set and lightly golden brown.
  7. Let cool slightly before serving. Serve warm with your favorite jam or fresh fruit.

Notes

  • For a make-ahead option, prepare the casserole up to the point of baking, cover, and refrigerate overnight. Add a few extra minutes to the baking time if baking from cold.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
  • You can substitute store-bought crepes for the blintzes if desired.
