You need satisfying comfort food that fits your strict diet. These Carnivore Pizza Muffins use a meat base instead of flour, delivering all the cheesy, savory flavor of pizza in a convenient, high-protein, zero-carb muffin form. They are simple to make and perfect for quick meals or snacks.

  • 1 lb ground beef (80/20 recommended)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped pepperoni or crumbled cooked sausage
  • 1/4 cup extra shredded mozzarella cheese (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a standard 12-cup muffin tin with parchment paper liners or grease well.
  2. In a large bowl, combine the ground beef, eggs, Parmesan cheese, and Italian seasoning. Mix these ingredients thoroughly with your hands until they are just combined. Do not overmix.
  3. Divide the meat mixture evenly among the 12 muffin cups, pressing the mixture down firmly to form a solid base for each muffin.
  4. Bake the meat bases for 15 minutes until they are mostly cooked through.
  5. Remove the tin from the oven. Top each meat base with a small amount of mozzarella cheese and your chosen meat topping (pepperoni or sausage).
  6. Return the tin to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly and the edges of the meat are nicely browned.
  7. Let the Carnivore Pizza Muffins cool in the tin for 5 minutes before carefully removing them. Serve warm.

Notes

  • For a richer flavor, use a mix of ground beef and ground pork in the base.
  • If you prefer a dairy-free option, omit the Parmesan and mozzarella, using only eggs to bind the meat base.
  • These muffins freeze well. Cool completely, then store in an airtight container in the freezer for up to one month. Reheat in the oven or microwave.
