Make these simple, protein-packed Carnivore Pizza Muffins using only meat, egg, and cheese for a satisfying, bunless pizza experience. These keto pizza bites are perfect for a quick snack or breakfast.

  • 1 lb ground beef (80/20 recommended)
  • 1/2 lb ground pork or Italian sausage (casing removed)
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup crumbled cooked bacon (optional, for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Grease a standard 12-cup muffin tin well.
  2. In a large bowl, combine the ground beef, ground pork/sausage, eggs, salt, and pepper. Mix the ingredients thoroughly with your hands until just combined; do not overmix.
  3. Divide the meat mixture evenly among the 12 muffin cups, pressing the mixture firmly into the bottom and slightly up the sides to form a small cup or crust shape.
  4. Bake the meat crusts for 12 minutes. This helps them set before adding the cheese.
  5. Remove the tin from the oven. Top each meat cup with an equal portion of the mozzarella and cheddar cheese mixture.
  6. Return the tin to the oven and bake for an additional 8 to 10 minutes, or until the cheese is melted, bubbly, and lightly browned.
  7. If using, sprinkle the crumbled bacon over the melted cheese immediately after removing them from the oven.
  8. Let the carnivore muffins cool in the tin for 5 minutes before carefully removing them. Serve warm.

Notes

  • For a stronger pizza flavor, you can mix 1 teaspoon of dried oregano into the meat mixture, though this technically moves away from a strict carnivore diet.
  • If you prefer a softer texture, use a higher fat content meat like 70/30 ground beef.
  • These protein packed bites freeze well. Cool completely, then store in an airtight container for up to three months. Reheat in the oven or microwave.
