A classic apple pie elevated with a rich, gooey caramel filling, perfect for any occasion.

  • 1 recipe for double pie crust
  • 6 medium tart apples (like Granny Smith), peeled, cored, and sliced 1/4-inch thick
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup caramel sauce, plus more for drizzling
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out one disk of pie dough and carefully place it into a 9-inch pie plate. Trim and crimp the edges as desired.
  3. In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt until evenly coated.
  4. Pour half of the caramel sauce over the apple mixture and toss gently to combine.
  5. Spoon the caramel-apple filling into the prepared pie crust. Dot the top of the filling with the small pieces of butter.
  6. Pour the remaining caramel sauce over the apples.
  7. Roll out the second disk of pie dough. You can either place it as a solid top crust, cutting vents, or cut it into strips for a lattice top. Place the top crust over the filling. Trim and crimp the edges to seal.
  8. Brush the top crust with the beaten egg wash and sprinkle with turbinado sugar, if using.
  9. Place the pie on the prepared baking sheet. Bake for 20 minutes at 400°F (200°C).
  10. Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, tent it loosely with aluminum foil.
  11. Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly. Drizzle with extra caramel sauce before serving, if desired.

  • For a richer caramel flavor, you can make your own caramel sauce from scratch.
  • Using a mix of apple varieties can add complexity to the flavor.
  • A sprinkle of flaky sea salt on top before serving can enhance the caramel flavor.
