  • 1/2 cup sweetened condensed milk
  • 1/4 cup water
  • 1/2 cup granulated sugar
  • 1/2 cup glucose syrup or light corn syrup
  • 1 tablespoon powdered gelatin
  • 1/4 cup cold water (for blooming gelatin)
  • Black, navy blue, and purple gel food coloring
  • Edible silver or gold dust for stars

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. Line the bottoms with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Add the sugar and mix well.
  3. In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix on low speed until just combined.
  4. Carefully pour the hot coffee into the batter and mix until smooth. The batter will be thin.
  5. Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  7. Once cool, level the cakes if necessary. Place one layer on your serving plate or cake board. Frost the top with a thin layer of chocolate buttercream (not included in this base recipe but necessary for structure). Place the second layer on top.
  8. Apply a thin crumb coat of buttercream to the entire cake and chill for 30 minutes to set the structure.
  9. Prepare the mirror glaze: Sprinkle the gelatin over 1/4 cup of cold water in a small bowl and let it bloom for 5 minutes.
  10. In a saucepan, combine the sugar, condensed milk, and 1/4 cup of water. Heat over medium heat, stirring until the sugar dissolves. Bring to a boil, then remove from heat.
  11. Stir in the bloomed gelatin until fully dissolved. Pour this mixture over the white chocolate chips in a heatproof bowl. Let it sit for 2 minutes, then whisk until smooth. Stir in the corn syrup.
  12. Divide the glaze into three separate bowls. Color one black, one navy blue, and one purple using the gel colors. Let the glazes cool to about 90°F (32°C) for optimal pouring consistency.
  13. Place the chilled cake on a wire rack set over a baking sheet to catch drips. Pour the black glaze first, covering the top and sides. Immediately drizzle the navy and purple glazes randomly over the black to create a galaxy effect.
  14. While the glaze is still wet, lightly dust the surface with edible silver or gold dust to mimic stars.
  15. Allow the glaze to set (about 10 minutes). Carefully transfer the cake to your final serving platter. Chill until ready to serve.
