A fresh and vibrant pasta salad featuring tomatoes, mozzarella, and basil, perfect for make-ahead meals and picnics.

Ingredients

  • 1 pound pasta (rotini or penne recommended)
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella pearls or diced fresh mozzarella
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and basil.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, minced garlic, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For best results, use fresh mozzarella.
  • You can add grilled chicken or arugula for extra flavor and protein.
