You need a fast dessert. These super easy cake mix cookie bars use just three base ingredients. They are chewy, soft, and you can customize them with any cake mix flavor or add-ins you like. These sheet pan treats are perfect for potlucks or sudden sweet cravings.

  • 1 box (15.25 oz) yellow cake mix
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup mix-ins (e.g., chocolate chips, M&Ms, nuts) (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, combine the dry cake mix, eggs, and melted butter. Mix with a spoon or spatula until just combined. Do not overmix.
  3. If you are using mix-ins, gently fold them into the dough now.
  4. Press the dough evenly into the prepared baking pan.
  5. Bake for 18 to 22 minutes, or until the edges are lightly golden brown and a toothpick inserted near the center comes out with moist crumbs attached.
  6. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  7. Cut into squares and serve.

Notes

  • For a fudgier, brownie-style bar, use chocolate cake mix and add 1/2 cup of chocolate chips.
  • If you use a spice cake mix, add 1/2 cup of white chocolate chips for a different flavor profile.
  • To make these bars extra gooey, slightly underbake them by 1-2 minutes. They will set up more as they cool.
