Master the iconic Caesar salad at home with crisp romaine, creamy garlic anchovy dressing, crunchy croutons, and Parmesan cheese.

Ingredients

  • 1 large head romaine lettuce, chopped
  • 1 cup croutons
  • 1/4 cup grated Parmesan cheese
  • For the dressing:
  • 2 anchovy fillets, minced
  • 1 clove garlic, minced
  • 1 large egg yolk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare the dressing: In a small bowl, whisk together minced anchovy, minced garlic, egg yolk, lemon juice, and Dijon mustard.
  2. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified and creamy.
  3. Season the dressing with salt and black pepper to your preference.
  4. In a large bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.
  5. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  6. Serve immediately.

Notes

  • For a richer dressing, you can use a whole egg instead of just the yolk.
  • If you don’t have anchovy fillets, you can use 1 teaspoon of anchovy paste.
  • Ensure your egg is fresh if using raw.
