Make these simple Buckeye Graham Crackers for a quick, kid-friendly dessert. This no-bake treat combines creamy peanut butter filling between crunchy graham crackers, all dipped in rich chocolate coating.

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil
  • 24 graham crackers

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, combine the peanut butter, softened butter, and powdered sugar. Mix with a hand mixer or by hand until the mixture is smooth and fully combined. This is your peanut butter filling.
  3. Take one graham cracker and spread a generous layer of the peanut butter filling on top. Place a second graham cracker on top to create a sandwich. Gently press the edges to seal.
  4. Repeat this process until you have used all the graham crackers, creating 12 peanut butter graham cracker sandwiches.
  5. Place the sandwiches on the prepared baking sheet and chill them in the refrigerator for at least 30 minutes until the filling is firm.
  6. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth and melted.
  7. Remove the chilled sandwiches from the refrigerator. Dip the bottom half of each sandwich into the melted chocolate, leaving a small portion of the top graham cracker exposed, similar to a classic Buckeye candy shape.
  8. Place the dipped crackers back onto the parchment-lined baking sheet.
  9. Refrigerate the Buckeye Graham Crackers for at least 1 hour, or until the chocolate coating is fully set.

Notes

  • For a cleaner dip, use a fork to lower the cracker into the chocolate, lift it out, and gently tap the fork against the side of the bowl to let excess chocolate drip off before placing it on the parchment paper.
  • You can substitute milk chocolate or dark chocolate for semi-sweet chocolate chips based on your preference.
  • Store these easy no bake treats in an airtight container in the refrigerator for up to one week.
