Make this easy, no-bake bruschetta dip for your next gathering. It features a rich, creamy cheese base topped with fresh marinated tomatoes and basil, finished with a balsamic glaze. This flavorful cold dip is a simple party food staple.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 4 ounces Boursin cheese (or other herbed cheese spread)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cherry or grape tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon balsamic glaze, for drizzling
  • Pita chips or crusty bread, for serving

Instructions

  1. In a medium bowl, combine the softened cream cheese, Boursin cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until completely smooth and well combined.
  2. Spread the cheese mixture evenly into the bottom of a shallow serving dish or pie plate. This forms your creamy base layer.
  3. In a separate small bowl, combine the halved tomatoes, chopped basil, olive oil, and balsamic vinegar. Gently toss to coat the tomatoes. Let this mixture sit for at least 10 minutes to marinate.
  4. Spoon the marinated tomato and basil mixture evenly over the cheese layer.
  5. Drizzle the top lightly with balsamic glaze just before serving.
  6. Serve this flavorful cold dip immediately with pita chips or toasted baguette slices.

Notes

  • You can prepare the tomato topping mixture up to 4 hours ahead of time. Keep it refrigerated separately until you are ready to assemble the dip.
  • For an elegant presentation, use thinly sliced, toasted baguette pieces instead of pita chips.
  • If you do not have balsamic glaze, you can reduce 1/4 cup of balsamic vinegar in a small saucepan over medium heat until it thickens slightly, about 5-7 minutes. Let it cool before using.
