  • 1/4 cup milk
  • 1 tablespoon butter
  • 4 slices bacon, cooked and crumbled, or 1/2 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked diced potatoes or hash browns (optional)
  • 1/2 cup sautéed vegetables like bell peppers and onions (optional)
  • 4 large flour tortillas
  • Salsa, for serving
  • Sour cream, for serving

Instructions

  1. Whisk eggs and milk in a bowl. Season with salt and pepper.
  2. Melt butter in a non-stick skillet over medium heat.
  3. Pour in egg mixture and cook, stirring occasionally, until scrambled and cooked through.
  4. Warm tortillas according to package directions.
  5. Lay each tortilla flat. Spoon a portion of scrambled eggs onto the center of each tortilla.
  6. Top eggs with crumbled bacon or sausage, shredded cheese, and optional potatoes or vegetables.
  7. Fold in the sides of the tortilla, then tightly roll from the bottom up to create a burrito.
  8. Serve immediately with salsa and sour cream, or wrap tightly in foil for on-the-go enjoyment.
