  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Gradually whisk in the milk until the mixture is smooth and begins to thicken slightly.
  4. Reduce the heat to low. Add the shredded cheddar cheese and Monterey Jack cheese one handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not let the sauce boil.
  5. Once all the cheese is melted and the sauce is smooth, stir in the salt, garlic powder, onion powder, and paprika.
