  • 1 cup lager beer (or non-alcoholic beer)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the beer until the mixture is smooth. Bring the mixture to a simmer, stirring until it thickens slightly, about 3 to 5 minutes.
