A silky, pub-style beer cheese dip perfect for soft pretzels, with a balanced beer flavor.

  • 1 tablespoon butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup lager or stout beer
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Gruyere cheese, shredded
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: pinch of cayenne pepper

Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Whisk in flour and cook for 1 minute, stirring constantly, to form a roux.
  3. Gradually whisk in milk until smooth.
  4. Cook, stirring, until the mixture thickens, about 3-5 minutes.
  5. Stir in beer, garlic powder, and onion powder.
  6. Reduce heat to low and gradually add shredded cheeses, stirring until melted and smooth. Do not boil.
  7. Season with salt, pepper, and cayenne pepper if using.
  8. Serve immediately with soft pretzels.

Notes

  • For a smoother dip, ensure cheese is fully melted before serving.
  • To keep warm, transfer to a slow cooker on the “warm” setting.
  • Lager provides a lighter beer flavor, while stout offers a richer, deeper taste.
  • Non-alcoholic beer can be substituted for regular beer.
  • To avoid graininess, do not overheat the dip after adding the cheese.
