Make delicious, fluffy banana pancakes using simple ingredients. This easy recipe is a family favorite, perfect for a quick breakfast or weekend brunch.

Ingredients

Scale
  • 2 large ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon brown sugar
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • Butter or oil for the griddle

Instructions

  1. Combine the mashed bananas and eggs in a medium bowl. Whisk until smooth.
  2. In a separate bowl, whisk together the flour, baking powder, salt, and brown sugar.
  3. Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  4. Stir in the milk and vanilla extract until the batter is smooth.
  5. Heat a lightly oiled griddle or large non-stick skillet over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip carefully.
  8. Serve immediately with your favorite toppings.

Notes

  • Use very ripe bananas for the best natural sweetness and flavor.
  • For extra fluffy banana pancakes, let the batter rest for 5 minutes before cooking.
  • Add 1/2 cup of rolled oats to the batter for Banana Oatmeal Pancakes.
  • Serve with maple syrup, fresh fruit, or a sprinkle of cinnamon for a sweet breakfast treat.
