You can create this stunning, layered Baileys Chocolate Cheesecake Trifle without turning on your oven. This recipe combines a chocolate cookie base, a creamy no-bake cheesecake filling infused with Irish Cream, and rich chocolate layers for an impressive party dessert.

Ingredients

Scale
  • 1 1/2 cups chocolate cookie crumbs (like Oreos, filling removed)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 cup heavy whipping cream, cold
  • 1/4 cup granulated sugar (for whipped cream)
  • 1 package (3.4 oz) instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1/2 cup Baileys Irish Cream liqueur (for pudding layer)
  • 1 cup whipped topping (like Cool Whip), thawed, for topping
  • Chocolate shavings or extra cookie crumbs for garnish

Instructions

  1. Prepare the base: Mix the chocolate cookie crumbs and melted butter in a bowl until combined. Press this mixture firmly into the bottom of a large glass trifle bowl or individual serving glasses. Chill for 15 minutes.
  2. Make the cheesecake layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gradually beat in 1/2 cup of Baileys Irish Cream until fully incorporated. Set aside.
  3. Prepare the chocolate pudding layer: In a separate bowl, whisk together the instant chocolate pudding mix, cold milk, and the remaining 1/2 cup of Baileys Irish Cream until the mixture thickens, about 2 minutes.
  4. Whip the cream: In a clean, cold bowl, beat the heavy whipping cream and granulated sugar until stiff peaks form. Gently fold half of the whipped cream into the cream cheese mixture to lighten it.
  5. Assemble the trifle: Create the first layer over the chilled cookie base by spreading half of the cream cheese mixture evenly.
  6. Next, spoon half of the thickened Baileys chocolate pudding mixture over the cheesecake layer.
  7. Repeat the layers: Top the pudding with the remaining cream cheese mixture, followed by the remaining chocolate pudding.
  8. Top the trifle: Gently spread the thawed whipped topping over the pudding layer. Garnish the top with chocolate shavings or reserved cookie crumbs.
  9. Chill the Baileys Chocolate Cheesecake Trifle for at least 4 hours, or preferably overnight, to allow the layers to set before serving.

Notes

  • For individual servings, use small jars or clear glasses instead of one large trifle bowl.
  • If you prefer a firmer cheesecake layer, you can add 1/4 teaspoon of gelatin dissolved in 2 tablespoons of hot water to the cream cheese mixture before folding in the whipped cream.
  • You can substitute the cookie base with crumbled brownies for an even richer chocolate flavor.
  • Keep any leftover Baileys Irish Cream chilled if you plan to use it in drinks alongside your dessert.
